對於「食」十分講究的日本,以卡通人物作為主題餐廳主軸行銷十分盛行,臺灣亦是引入許多國外知名公仔作為特色餐廳主打,美國有藝術家把蛋糕作成屍體造形,英國則有人開了間搞怪人肉販賣店,泰國也很逗趣的製作了假牙冷飲,食物加上一些詼諧方式去呈現,更能吸引消費者購買慾,這些皆隸屬於食物藝術與設計的一環。
日本大阪總和學校也有門專門對甜點烘焙外形設計(涵蓋包裝)的科系:品牌造形整合,細於分工成品將更精緻;食物牽涉於美學的成份越來越多,世界各地接二連三崛起的新名詞:『食物藝術與設計』,這是臺灣可以跟進國際化的部分,也是本創作想追求的夢想。本創作其創作目的如下:1.推廣食物藝術與設計使其更廣為人知,2.探討社會病態議題引起關注與改善,3.瞭解拓展藝術領域再造商業價值,4.提供喜愛食物藝術與設計者後續研究。
近年來社會問題的層出不窮,文明病以及許多醫學無法歸類證明的症候群者越來越多,本創作者藉由收集市面上案例樣本,巧妙的運用大家耳熟能詳的六部迪士尼系列公主故事搭配黑色幽默作發想,以及業界訪談並親身體驗食物藝術與設計,藉由人類的最基本需求去傳遞關注社會議題。本創作者特地為此前往臺中大里「糖藝菓子烘焙坊」學習翻糖蛋糕製作,讓本創作能不設限地銜接童話故事的概念,設計翻糖蛋糕外型盼透過黑色幽默的手法,呈現社會議題發人省思之處,促使商品能締造更大的商業價值。

英文摘要

Theme restaurants featuring cartoon characters are gaining popularity in Japan, a country noted for their good taste in food. In Taiwan as well, many specialty restaurants use some well-known foreign model figures as promotion symbols. In America, some artists have cakes sculpted into body shape. There are funny ‘human flesh’ shops in the United Kingdom. In Thailand, you might have a treat of soft drink with ice in the shape of dentures. These are examples of funny food decorations designed as a work of art for the purpose of attracting customers.

In Osaka, Japan, schools offer classes especially for dessert design (including packing): integration of brand and packing. As food is now combined more with art and beauty, there comes up with a new area called "food art and design". This area can be cultivated in Taiwan, and it is also what the author wants to pursue. The purpose of this thesis is as followed: 1. Promote food art and design. 2. Investigate and improve social problems. 3. Understand the value of business and present them in terms of art. 4. Do further research on favorite food art and design.

There are many social problems in recent years. More and more people are diagnosed with civil diseases or unknown syndromes. The author collect cases in the market, combine the six princess Disney cartoons with black humor, interview the vendors, personally experience food art and design, and concern the social issue with humans basic need. The author also learned how to make fondant cake to connect the thesis with the concept of fairy tales. By designing fondant cake in a humorous way to make people consider the social issue, and also brings out the business value of products.
