近年來台灣人開始關注在地文化的議題,以及非物質的文化資產,並逐漸發展成旅遊觀光為目的,連帶人文觀光的傳統行業也逐漸受到人們的關注。台南府城發跡甚早,歷史悠久的傳統糕餅店林立,但七十年代後台灣經濟起飛後,或許是因飲食習慣的改變,糕餅變成台灣人日常消費的項目,糕餅在傳統民俗節慶中扮演著不可或缺的角色與意義,經由台灣的本土化後,現今在不同地區的餅舖都有自己的故事、特色、糕餅的口味等,以建立餅鋪的獨特性。傳統店家它不僅代表著世代承襲下來的口味與穩固的誠信,也蘊藏著糕餅文化的傳承,而台南傳統糕餅店後續無人接棒,過去二十年來的消費習慣逐漸改變,導致兩百多家傳統糕餅店步入歷史,種種因素導致傳統糕餅老店消逝卻無紀錄保存,有鑑於此無形文化在記錄保存的重要,影像紀錄有時效性,可直接紀錄快消逝的社會現實。

本創作藉由收集台南的糕餅文化資源調查、影像紀錄等相關文獻探討,利用台南傳統老店文化資源以保存紀錄為目的,藉此期望能夠增加國人對於在地文化的認知。本創作運用訪談法與觀察法調查,並深度訪談三家超過六十年且傳承兩代的台南傳統糕餅店家,採訪過程透過攝影記錄,取得相關拍攝影片、照片,運用動態影像表現,並在學校昌明樓4511創意空間舉辦展覽,展出三部影片,預期透過展覽效益傳播在地文化價值的重要性,整體研究可供運用影像記錄保存在地文化,及相關傳統產業影像紀錄創作者參考。

英文摘要

In recent years, Taiwanese people are more aware of local cultures and intangible cultural heritage, and integrate them into tourism. That in turn draws people’s attention to some traditional industries. As the oldest city in Taiwan, Tainan has a lot of long-established traditional bakeries. Since the take-off of the Taiwan economy in the 1970s, as people’s eating habits changed, cakes and pastries have become popular and played an important role in traditional festivals. After localization, bakeries across different districts have developed their own stories, characters and tastes, contributing to their uniqueness. Not only these old shops represent classic flavors and reputation, they also inherit the food culture. Having no successor or being affected by changes in consumer behaviors, many of them have faded into history yet left no record. There is a need to document and preserve; with its timeliness, photography enables us to capture the fading social reality.

Through surveying and documenting, this project aims to preserve the history of decades-old bakeries and the culture of traditional cakes and pastries in Tainan, promoting a better understanding of local cultures among Taiwanese citizens. Interview and observational method were used: three over 60-year-old bakeries in Tainan were interviewed and filmed to obtain videos, photos and information needed for creation. An exhibition was held in the gallery (Room 4511) at school, where a documentary series consisting of three videos were screened alongside a range of posters. While the exhibition shows the value of local cultures, this project as a whole also serves as reference materials for other documentaries on local cultures or traditional industries.
